The Vegan Omelette
Vegan omelette mix, 4 heaping teaspoons
Soy milk, 1/2 cup
Olive oil, 1 teaspoon
Canola oil spray, 10 servings
for greasing
Additions
Pesto spread, 8 teaspoons
can be homemade
Vegan cream cheese, 8 teaspoons
can be homemade

Preparation

1. Mix the vegan omelette ingredients well until there are no lumps.
2. Spray the Belgian waffle maker with oil spray and pour the mixture.
3. Wait 3-4 minutes until ready and transfer to a serving plate.
4. Fill with pesto and vegan cheese cubes (fill each cube with 0.5 teaspoon of pesto or vegan cheese).
