1. Clean well the celery and parsley from sand.
2. Cut all the vegetables into cubes.
3. Transfer the diced vegetables and leaves to a pot, cover with water and cook for about 1.25 hours until softened.
4. Grind well in a blender (regular or rod) and filter well (there are soups that don’t have to be filtered - but not in the case of celery, which its leaves are unpleasant to eat). Season with salt and pepper and serve hot. A delicious celery soup is obtained.

After filtering, you can add a cup of vegetable cream and 2 heaping tablespoons of vegan parmesan, and cook until the parmesan dissolves.
Total time: 1-2 hours
Equipment: blender (standard or rod).
The preparation method also includes grinding. The spices in the recipe are according to personal taste.
