Ingredients
Green Lentil, 3/4 cup
Dry bulgur, 1½ cups
Turmeric, 1 flat teaspoon
Olive oil, 3 tablespoons
Lemon juice, 1/2 unit
Salt, 1 flat teaspoon
Black pepper, 1 flat teaspoon
Dried parsley, 1 flat tablespoon
Water, as needed
Preparation
1. Boil water in a pot, cook the green lentils in it for about 30-40 minutes until softened, then strain.
2. Soak the bulgur in boiling water with the turmeric for about 10-15 minutes and strain.
3. Transfer the bulgur to a serving bowl, add the cooked lentils, olive oil, lemon juice and spices, and mix. A perfect vegan mujaddara bulgur is obtained.
