Ingredients
The Quinoa
Quinoa, 1 cup
Canola oil, 2 tablespoons
Water, 2 cups
Salt, 1/2 flat teaspoon
The Vegetables
Canola oil, 3 tablespoons
Onion, 1 medium unit
Sweet potato, 1 medium unit
Butternut squash, 1 small unit
Zucchini, 1 medium unit
Red pepper, 1 medium unit
Garlic, 3 cloves
Salt, 1/2 flat teaspoon
Black pepper, 1/4 flat teaspoon
Preparation
1. Rinse the quinoa and strain.
2. Heat the oil, add the quinoa and fry for 1-2 minutes.
3. Add the water and salt, and cook on a low heat for about 20 minutes (like rice cooking).
4. Cut all the vegetables into small cubes, fry them in oil and add the spices (add 0.25 cup water just in case).
5. Mix the vegetables with the quinoa, continue to cook for about 2-3 minutes, transfer to a serving dish and decorate as you like.
