Vegan Corn Schnitzel

Vegan corn schnitzel with tofu coated in wholemeal bread crumbs and sesame seeds

Ingredients

The corn schnitzel
Corn kernels, 3 cups
canned or frozen and thawed
Whole wheat flour, 1/2 cup
or spelled flour
Wholemeal bread crumbs, 1/2 cup
Tofu, 100 g
grated
Raw tahini, 1 tablespoon
Soy sauce, 2 tablespoons
Canola oil, 1 tablespoon
for frying
The coating
Wholemeal bread crumbs, 1 cup
Sesame seeds, 2 tablespoons
Whole wheat flour, 1/2 cup
mixed with water to form a "glue"

Preparation

1. Grind 2 cups of corn and mix with the rest of the corn schnitzel ingredients (except the oil for frying).
2. Create schnitzels.
3. Using a small brush, brush the schnitzels with the flour and water mixture and dip in the bread crumbs with the sesame seeds.
4. Fry in a non-stick pan with a little oil. Another option is to bake the corn schnitzels at 400°F (200°C) on greased baking paper for about 15-20 minutes (until the coating is golden).
