Vegan Persimmon Latkes

Creative and special vegan latkes for Hanukkah from sweet persimmon fruit combined with apple, whole wheat flour and spices

Persimmon, 3 medium units
peeled and grated
Apple, 1 medium unit
peeled and grated
Apple puree, 1/3 cup
or half crushed banana
Whole wheat flour, 3 flat tablespoons
add only as needed
Cinnamon, 1/2 flat teaspoon
Ground cloves, 1/4 flat teaspoon
Ground ginger, 1/4 flat teaspoon
Canola oil, 1/2 cup
for frying (add gradually)


1. Mix all the ingredients in a bowl (except the frying oil).
2. Heat the oil in a pan.
3. Using a tablespoon take from the mixture, fry thin latkes for about a minute on each side or until browned and place on paper towel.
4. Sprinkle with powdered sugar (optional).
