Ingredients
Zucchini, 4 medium units
Onion, 1 large unit
Coriander, 1/2 cup
Parsley, 1/2 cup
Mint, 1/2 cup
Salt, 1 flat teaspoon
Lemon juice, 1/2 small unit
Lemon zest, from half a small lemon
Green buckwheat, 1 cup
Oatmeal, 1/2 cup
Preparation
1. Crush all the ingredients in a food processor until you get a soft and sticky texture enough to form patties. If the patty falls apart by hand or the mixture is too thin, you can add 2-3 tablespoons of chickpea flour or oatmeal until a stable texture is obtained.
2. For semi-deep frying: Heat a thick pan with 2-3 cm high of oil, form medium patties, flatten them slightly, and place gently in the pan. Fry for a few minutes on each side until lightly browned, remove and transfer to a plate lined with paper towel to absorb the oil.
3. For baking in the oven: Form thick patties, place in a pan with baking paper and oil well on all sides. Bake at 356°F (180°C) for about 20 minutes until slightly browned, being careful not to bake too much so as not to dry them out. Serve immediately. If you want to save afterwards, transfer to an airtight box while it is still hot so that the moisture will be maintained.
