The fruit mixture
Strawberry, 150 g (1 cup)
Apple with peel, 150 g (1 cup)
Sugar, 3/4 cup
Lemon juice, 2 tablespoons
Vanilla extract, 1 teaspoon
Lemon zest, 1/2 teaspoon
The rest of the ingredients
Olive oil, 3/4 cup
Spread based on coconut components 9% fat, 120 g
Apple puree, 60 g
Self-rising flour, 2 cups
Ground coconut, 4 flat tablespoons
Powdered sugar, 1 tablespoon
1. Preheat the oven to a temperature of 350°F (175°C).
2. In a bowl, whisk the oil with the "cheese" and apple puree, and add the flour and coconut. Stir just until a very thick dough is obtained.
3. Add the fruit mixture with all the liquids formed, stirring only until combined. The texture will be strange and not smooth, and this is how it should be - it is important to avoid over-mixing.
4. Grease a round baking pan (24 cm in diameter), and flatten the dough with a fork. Bake for about 35 minutes or until a toothpick stuck in the cake comes out clean (be careful not to stick it in a piece of fruit). Remove from the oven, let the cake cool, sprinkle with powdered sugar, slice and serve.
