Asian-Style Quinoa with Green Bean

Vegan quinoa with green bean, peppers and Asian-style edamame - satisfying and wonderful vegan dish for lunch that is quick and easy to prepare

Ingredients

Quinoa, 1 cup
dry
Water, 2½ cups
Yellow pepper, 1 medium unit
choped into cubes
Red pepper, 1 medium unit
choped into cubes
Green bean, 800 g
frozen
Soy sauce, 1/4 cup
Teriyaki sauce, 3 tablespoons
Garlic, 1 clove
crushed
Ginger, 1 flat teaspoon
crushed
Sweet chili sauce, 1 tablespoon
Sesame oil, 1/8 teaspoon
Edamame, 400 g
frozen

Preparation

1. Rinse the quinoa well in a colander and transfer to a pot. Heat until the quinoa dries and comes out with a "nutty" smell (about 2 minutes). Add the water, cover and bring to a boil. Lower the heat and cook until the quinoa is soft and the water will evaporate (about 15-20 minutes).
2. Place the green bean in a colander and pour over boiling water to melt the ice layer.
3. Transfer the peppers to a pan and add soy sauce, teriyaki sauce, garlic, ginger and sweet chili sauce. Mix, add the green bean and stir until the green bean are completely cooked (about 5 minutes).
4. Turn off the heat and add the quinoa and sesame oil. Mix and serve with prepared edamame according to the manufacturer's instructions.
