Ingredients
Chocolate Chip Cake Layer
White flour, 1¼ cups
Baking powder, 5 g
Sugar, 1/2 cup
Salt, 1 pinch
Water, 1/2 cup
Canola oil, 1/4 cup
Vanilla extract, 1/4 teaspoon
Dark chocolate, 50 g
Canola oil spray, 4 servings
The Cookies Layer
Oreo chocolate cookies, 8 units
The Brownie Layer
Dark chocolate, 150 g
Canola oil, 1/4 cup
White flour, 1/3 cup
Sugar, 1/2 cup
Salt, 1 pinch
Water, 1/4 cup
Preparation
1. Preheat the oven to 356°F (180°C) and grease the cake tray.
2. Make the chocolate chip cake layer: mix the flour, baking powder, sugar and salt in a bowl. Add the water, oil and vanilla extract at once, and stir well until smooth mixture is obtained. Fold the chopped chocolate into the batter, transfer to the greased tray and put in the freezer (there is no need to wash the mixing bowl, you can also use it for the chocolate batter!).
3. Make the brownie batter: add the dark chocolate in a heatproof bowl and melt in the microwave for a minute. Remove from the microwave, stir and heat for another minute. Stir completely until all the chocolate has melted (heat a little more if necessary). Add the oil and mix. Transfer to the mixing bowl and add the rest of the brownie ingredients at once. Stir until a thick and uniform batter is obtained.
4. Remove the tray from the freezer, arrange over the Oreo cookies densely and spread over the brownie batter.
5. Bake for about 45 minutes. The surface of the brownies will have a hard crust (even if a toothpick inserted in the center of the brownies comes out wet, that's fine). Cool for about 20-30 minutes, wrap with plastic wrap and transfer to the freezer for several hours. Once the brownies freeze, they can be sliced with a large and sharp knife. Allow the vegan brownies to reach room temperature and serve.
