Vegan Cauliflower Latkes with Orange Lentil

Vegan cauliflower and orange lentil latkes in combination with whole wheat flour - a perfect vegan dinner for the whole family

Cauliflower, 1/2 medium unit
cut into flowers
Orange lentils, 1 cup
Garlic, 1 clove
Whole wheat flour, 5 flat tablespoons
Thin pink salt from the Himalayas, 1 teaspoon
or regular salt
Black pepper, 1/2 flat teaspoon


1. Cook the cauliflower flowers for about 20 minutes until softened and strain.
2. At the same time, cook the orange lentils for about 15-20 minutes and strain.
3. Transfer the cauliflower to a bowl and mash it with a fork.
4. Add the cooked orange lentils, garlic, flour and spices, and mix.
5. Heat a little oil in a pan, form latkes with slightly wet hands and fry on both sides (you can also bake in the oven for about 15 minutes in an oven at 356°F (180°C)). Now you can enjoy healthy vegan cauliflower latkes with lentils!
