The initial process
White flour, 1 cup
Water, 3/4 cup
The secondary process (gradually for 4 days)
White flour, 2 cups
0.5 cup each day
Water, 1.33 cups
0.33 cup every day


1. Mix the flour and water well, transfer to a bowl with a lid but do not close completely (leave it a little open and place on the counter until the next day).
2. Move on to the secondary process - every day add 0.5 cup flour and 0.33 cup water and stir well - so do for 4 days.
3. On the fifth day the sourdough is ready for work once small bubbles come out of it. If not used directly - keep in the refrigerator in a sealed container. By the way, all types of flour can be used.
4. Now all that is left to do is make a great sourdough bread!
