Pasta with Roasted Peppers

Penne pasta with roasted pepper antipasti and a delicate tomato sauce with a thyme scent

Ingredients

The pasta
Penne pasta, 200 g
Salt, 1 flat tablespoon
for cooking the pasta
Water, as needed
for cooking the pasta
The roasted peppers
Red pepper, 1 medium unit
Yellow pepper, 1 medium unit
Olive oil, 5 tablespoons
Salt, 1/2 flat teaspoon
Black pepper, 1/2 flat teaspoon
The sauce
Garlic, 2 cloves
Olive oil, 3 tablespoons
for frying the garlic
Tomato paste, 200 g
Water, 1/2 cup
Salt, 1/2 flat teaspoon
Black pepper, 1/2 flat teaspoon
Sugar, 1/2 flat teaspoon
Thyme, 2 stems
only leaves

Preparation

1. Start preparing the antipasti (roasted peppers): Preheat the oven to 400°F (200°C).
2. Wash and cut the peppers into strips and place in a bowl.
3. Mix the peppers with the olive oil, salt and black pepper.
4. Sprinkle them on top in a baking tray with baking paper and bake until softened (when it starts to brown - for about 20-30 minutes). When they come out of the oven you can peel off the peeled shell.
5. Continue with the preparation of the sauce: chop the garlic and place in a hot pan with the olive oil. Fry for a minute and add the tomato paste and water. Mix well.
6. Add the salt, black pepper, sugar and thyme leaves. Mix well.
7. Add the roasted peppers and continue mixing.
8. Making the pasta: Boil water with a tablespoon of salt. When the water is boiling add the dry pasta. Cook for about 10-15 minutes until the preferred softness.
9. Strain the water well and transfer to a serving plate/bowl.

The preparation method also includes baking and frying. The spices in the recipe are according to personal taste.
